Interview them, thoroughly screen them. Check the experience level, run a few test trials lay down some rules and voila, new people. OK maybe its not that simple, but it couldn't be so complicated that new people are next to impossible to find.

They could easily hand out cards or flyers in bars and clubs and find singles/couple's willing to do it. Think about if you done it or anyone else in your area, guaranteed you would get willing participants.
